The Hale ‘Aina
‘Ohana funds food service education programs by and for the UH Community College
culinary arts program throughout Hawai‘i. Among the programs that are funded are:
Guest Chef
Lectures/Demonstrations
Past programs have featured Raphael Lunetta of Jiraffe Restaurant in Santa Monica,
Norm Van Aken of Norman's in Florida and Lynne Rossetto Kasper, host of "The Splendid
Table" on National Public Radio.
Themed Cooking
Demonstrations Programs have featured Alan Wong, Linda Yamada of The Beach House on
Kaua‘i and Randall Ishizu of Ihilani Resort and Spa provide students a better
understanding of local food products and best practices.
Guest Chef
Dinners
To prepare dinners for up to 120 people, Community College instructors visit a
restaurant to learn one recipe each to teach students. On event day, the guest chef
arrives early to supervise and refine student work. Each student is paired with an
industry professional throughout preparation, service and clean-up.
Professional
Development for Culinary Arts Instructors
Programs have included extended workshops with culinary industry leaders.
The ‘Ohana sponsored the first annual Hawai‘i State Culinary Educators Summit for
Secondary Education which brought leading chefs together with Community College and high
school educators for three days of workshops, lectures and discussions.

‘Ohana programs are video-taped and made available to culinary arts program
instructors and individual students.
